This fermented side dish is most commonly associated with German /Polish cuisine. Although 'Sauerkraut' is a German word (meaning sour herb/vegetable), the dish is thought to have originated in Northern China.
My version of this classic may contain simple ingredients but is packed with flavour! Slightly sour with aromatic notes; this kraut works well with salted meats & makes a wonderful addition to soups/stews.
Ingredients: White Cabbage, Carraway Seeds, Cornish Sea Salt.
